How to Make Cheesy Tortilla Bake

This is a big favorite in my house and it is very easy to make, if it wasn’t I would not be making it!


What you will need:

  • 1 pack of Flour Tortillas—the big ones
  • 1 pack of taco seasoning
  • 1 can of cream of mushroom soup
  • About ½ cup of milk
  • A large bag of shredded cheese—around 2 cups(you can use a Colby and Monterey Jack mix or any other type of cheese mix you want to)  I love lots of cheese and sometimes I use more than 2 cups, its up to you.
  • About 1 pound of chicken breast
  • 1 9x12 rectangular pan


Prepare the chicken breast.  If you plan ahead the best way to fix the chicken is in the Crockpot.  This way the meat has time to cook slowly and fall apart.  If you do this I suggest adding some water to it, maybe 1 cup depending on the size of your Crockpot and the amount of time you are putting it in for.  I usually use the low setting.  Add your package of taco seasoning and mix it up well.  Then let it cook all day while you are at work, if you don’t plan ahead and want to fix this meal anyway its okay to sauté your chicken in a skillet on top of the stove.  I usually add about ½ to 1 full cup of water and cook the chicken slowly that way.  Then add the taco seasoning and try to break the chicken apart the best way you can so that you don’t have big chunks in your bake.


After the meat is prepared you can assemble the bake as follows:  Before you put the bake together you need to mix your can of mushroom soup and milk together in a small bowl or measuring cup.  You may need to add a little more milk.  You want the mixture to be a little soupy but not runny. 


Once you have that done then you are ready to put this delicious meal together.  Pour a portion of the cream of mushroom soup and milk mixture into the bottom of the rectangular pan.  Spread it around and only use enough to coat the bottom of the pan.  Then open up your package of tortillas and line the bottom of the pan with them.  This should only take about 2 large tortillas.  Now you are ready to place the chicken mixture onto the tortillas.  Spread the mixture out evenly.  If the mixture is moist that’s great but try not to pour too much of the extra liquid in the bake.  You may want to use some liquid however to cover the meat.  After you have finished spreading the meat all around then you can top this mixture with lots of cheese.  Yum!


Now you can place two more tortillas over the top of this mixture.  Next, pour the remaining mixture of the cream of mushroom soup and milk over the top.  Then add more cheese.  Now cover this with aluminum foil and bake it in a 400 degree oven for about 30 minutes.  Let cool for a couple of minutes after you take it out of the oven to allow everything to set up a little.  Then slice it into squares and serve.  This is a yummy comfort food with tons of calories I’m sure.  But it is soooo good!  Eat in moderation if you are watching your weight or better yet save those extra points to enjoy a good sized portion because once you start eating it, it’s hard not to go back for seconds.
